Owned and operated by Andrew Foster and Steve Bowman, Fairsted Kitchen is a place where excellent service and hospitality meet unique flavors in a comfortable setting. Influenced by Frederick Law Olmsted, the founder of American landscape architecture who designed the very neighborhood the restaurant is home to, Fairsted Kitchen was inspired by Olmsted’s roots in the community and his Victorian-era Brookline estate of the same name. Sharing is encouraged, no matter the size of the dish, a sentiment that echoes Fairsted’s philosophy of communal dining. The menu, headed by Executive Chef Jason Albus, features contemporary American cuisine with subtle accents of Middle Eastern and European spice. Divided by size – snacks, small plates, entrees – sample dishes include a pig head lettuce wrap, large format braised oxtail for the table, zabuton steak, stuffed cabbage, Za’atar spiced chicken, and grilled sturgeon. Flavors are enhanced by Ras el hanout, harissa, sumac, tahini, and cumin. The beverage program is a nod to the era of the aperitif and features a concise cocktail menu created collectively by the team, including one cocktail and one aperitif available on draft. A combination of classic and tongue-in-cheek, playful concoctions are joined by bottled, small batch carbonated cocktails. Four taps, all from local craft brewer Jack’s Abby, and a carefully curated rotating selection of cans and bottles make up the beer list. A combination of terroir-driven Old World (i.e. Croatia, Peljesac Peninsula) and New World (i.e. Napa Valley) wines offer guests the opportunity to discover a wonderful version of something they might already be familiar with or something completely outside their realm of experience. What’s in a name? Fairsted Kitchen is named in homage to FL Olmsted, the great landscape architect whose stamp can be seen all over Brookline and Boston. Olmsted oversaw the widening of Beacon St and the installation of on of the country’s first trolley systems, creating Washington Square and transforming the area from sleepy pastures to a vibrant commercial destination, He laid out Aspinwall hill, directly behind our property, allowing for settling while preserving its beauty. He created the Boston’s famed emerald necklace less than a mile from our doors, one of the country’s first public green spaces. We draw our name from Fairsted, Olmsted’s Brookline manor and company offices, now a national historic site. Telling the story of Frederick Law Olmsted tells the story of the creation of our neighborhood and of Brookline itself, firmly rooting us in it’s traditions.
